    Trim any excess fat from the pork loin and slice it into 1-inch thick medallions.

    In a shallow bowl, mix the grated Parmesan cheese, garlic powder, salt, and black pepper.

    Coat the Medallions

    Dip each pork medallion into the olive oil, then coat it in the Parmesan mixture, pressing lightly to ensure it adheres.

    Grill the Medallions

    Preheat the grill to medium-high heat. Grill the pork medallions for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).
