1. Prepare the Tofu
Press the tofu to remove excess moisture. Cut into slices and marinate in chimichurri sauce for at least 30 minutes.
2. Cook the Pasta
In a pot of salted boiling water, cook the black bean pasta according to package instructions. Drain and set aside.
3. Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped green onions and Napa cabbage, sautéing until soft, about 5 minutes.
4. Cook the Tofu
In another skillet, heat a little olive oil over medium-high heat. Add marinated tofu slices and sear until golden brown on both sides, about 3-4 minutes per side.
5. Combine Ingredients
Add the cooked pasta to the skillet with the sautéed vegetables. Toss gently to combine, then season with salt and black pepper to taste.
6. Serve
Plate the vegetable pasta, topping with the seared tofu, pickled onions, and drizzle with carrot ginger-miso dressing. Serve immediately.
