Cauliflower Steak and Warm Chickpea Salad

    Prepare the Cauliflower

    Preheat the oven to 425°F (220°C). Slice the cauliflower head into thick steaks, about 1-inch thick. Brush both sides with olive oil and season with garlic powder, salt, and black pepper.

    Roast the Cauliflower

    Place the cauliflower steaks on a baking sheet lined with parchment paper. Sprinkle the parmesan cheese generously on top of each steak. Roast in the preheated oven for 25-30 minutes, or until golden and tender.

    Make the Warm Chickpea Salad

    While the cauliflower is roasting, in a large bowl, combine the cooked chickpeas, cherry tomatoes, and diced red onion. Drizzle with lemon juice, add cumin, and toss gently to combine.

    Prepare the Basil Sauce

    In a blender or food processor, combine fresh basil, 1 tbsp olive oil, and a pinch of salt. Blend until smooth. Adjust seasoning to taste.

    Once the cauliflower steaks are roasted, remove them from the oven. Serve the cauliflower steaks topped with the basil sauce alongside the warm chickpea salad.
