    Prepare the Brigadeiro Filling

    In a saucepan over medium heat, combine the sweetened condensed milk, cocoa powder, and butter. Stir continuously until the mixture thickens and pulls away from the sides of the pan, about 10-15 minutes. Remove from heat and let cool.

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine chocolate cookie crumbs with melted butter until well combined. Press the mixture into the bottom of a tart pan or pie dish to form a crust. Bake for 10 minutes, then let cool.

    Prepare the Ganache

    In a small saucepan, heat the heavy cream over medium heat until just boiling. Remove from heat and add the semisweet chocolate, stirring until melted and smooth. Allow to cool slightly.

    Assemble the Brigadeiro

    Once the brigadeiro filling has cooled, scoop it into the cooled cookie crust and spread evenly. Pour the chocolate ganache over the brigadeiro filling, smoothing it out as needed. Refrigerate for at least 2 hours to set.

    Top with Sprinkles

    Once set, remove from the refrigerator and top with chocolate sprinkles as desired. Slice and serve chilled.
