Prepare the Sausage Mixture
In a large mixing bowl, combine ground pork, minced garlic, paprika, cumin, black pepper, salt, and red pepper flakes. Mix well until all ingredients are thoroughly combined.

Stuff the Casings
Rinse the pork casings with cold water. Using a sausage stuffer, carefully fill the casings with the sausage mixture, being careful not to overstuff. Tie off the ends of the casings securely.

Cook the Sausages
In a large skillet over medium heat, cook the sausages for about 15-20 minutes, turning occasionally until they are browned and cooked through. You can also grill them for a smoky flavor.

Once cooked, remove sausages from heat, sprinkle with fresh parsley, and serve hot during brunch.
