Antipasti Preparation

    Roasting the Vegetables

    Preheat the oven to 400°F (200°C). Toss the cherry tomatoes, bell peppers, zucchini, and eggplant with olive oil, minced garlic, salt, and black pepper. Spread on a baking sheet in a single layer.

    Bake

    Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized. Remove from the oven and allow to cool slightly.

    Marinating

    In a large bowl, combine the roasted vegetables with balsamic vinegar and chopped basil. Stir gently to combine and let marinate for at least 15 minutes.

    Serve

    Transfer the marinated vegetables to a serving platter and sprinkle with crumbled feta cheese. Serve at room temperature.
