Marinate the Fish
Place the fish fillets in a shallow dish and pour the marinade over them. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Grill
Soak the mesquite wood chips in water for about 30 minutes. Preheat the grill to medium-high heat.

Grill the Fish
Drain the wood chips and place them in a smoker box or directly on the grill grates. Remove the fish from the marinade and place them on the grill. Grill for about 4-6 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Serve
Remove the fish from the grill and let it rest for a couple of minutes before serving. Enjoy your mesquite-grilled fish with your choice of sides.
