    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until softened, about 5-7 minutes.

    Add Garlic and Spices

    Stir in the minced garlic, dried oregano, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.

    Incorporate Tomatoes and Liquid

    Add the crushed tomatoes, fish stock (or clam juice), and white wine to the pot. Stir in the bay leaves and season with salt and black pepper. Bring the mixture to a simmer.

    Add Seafood

    Once simmering, add your selection of seafood (such as shrimp, clams, mussels, and fish) to the pot. Cover and cook for about 10-15 minutes until the seafood is cooked through and clams/mussels have opened.

    Remove bay leaves. Taste and adjust seasoning if necessary. Serve hot with crusty bread or over pasta.
