Prepare the Chicken
In a large bowl, combine the chicken thighs with soy sauce, garlic, ginger, black pepper, and sesame oil. Marinate for at least 30 minutes.

Sauté Vegetables
In a clay pot or Dutch oven, heat a tablespoon of sesame oil over medium heat. Add chopped onions, carrots, and bell pepper. Sauté until vegetables are tender, about 5-7 minutes.

Cook the Chicken
Add the marinated chicken thighs to the pot, skin-side down. Sear for 5 minutes, then flip the chicken and add the chicken broth. Bring to a simmer.

Simmer
Cover the pot and reduce the heat to low. Let it simmer for 30-40 minutes, or until the chicken is fully cooked and tender.

Serve
Remove the pot from heat. Garnish with chopped green onions and serve hot with rice.
