Method

Preparing the Tenderloin

  1. 1

    Trim the Tenderloin

Trim any excess fat and silverskin from the beef tenderloin using a sharp knife. This will help enhance the flavor and tenderness of the meat.

  2. 2

    Season the Meat

Rub the beef tenderloin with olive oil, then season generously with salt, black pepper, garlic powder, and fresh rosemary, ensuring an even coating.

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C). This will ensure the tenderloin cooks evenly and thoroughly.

Cooking the Tenderloin

  1. 4

    Sear the Tenderloin

In a large oven-safe skillet, heat 2 tablespoons of butter over medium-high heat. Once hot, add the beef tenderloin and sear for 4-5 minutes on each side until it's browned.

  2. 5

    Roast in the Oven

Transfer the skillet with the seared tenderloin to the preheated oven. Roast for 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

  3. 6

    Rest the Meat

Remove the tenderloin from the oven and transfer it to a cutting board. Tent with foil and let it rest for about 10 minutes before slicing.

Optional Sauce Preparation

  1. 7

    Prepare the Sauce

In the same skillet used for the tenderloin, add chopped shallots and cook over medium heat until softened. Pour in the red wine and beef broth, scraping up any browned bits from the skillet. Add thyme and simmer until reduced by half.

  2. 8

    Finish the Sauce

Stir in the remaining 2 tablespoons of butter until melted and smooth. Season with salt and pepper to taste.

Serving

  1. 9

    Slice and Serve

Slice the rested tenderloin into 1-inch thick slices and serve immediately, drizzled with the optional sauce if desired.
