Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes, or until they become tender. Season with 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1 teaspoon of salt, and 0.5 teaspoons of black pepper, stirring well to combine.

While the vegetables are cooking, drain and rinse 1 cup of canned chickpeas. Add the chickpeas to the skillet with the sautéed vegetables, mixing well. Cook for an additional 3-4 minutes to heat through.
