Preparation

    Prepare the sausages

    Preheat your grill or stovetop griddle to medium-high heat. While it is heating up, remove the sausage casings from the bratwurst, andouille, sweet and hot Italian, and chorizo sausages. Shape the sausage meat into patties or keep them whole, depending on your preference.

    Prepare the bacon

    If using bacon, lay the strips flat on a baking sheet and bake in the oven at 375°F (190°C) for about 15-20 minutes, or until crispy. Alternatively, you can cook them in a skillet over medium heat until crispy.

Cooking

    Cook the sausages

    Place the bratwurst, andouille, sweet or hot Italian sausages, and chorizo on the grill. Cook for about 6-8 minutes on each side until fully cooked and browned. Use a meat thermometer to ensure they reach an internal temperature of 160°F (71°C).

    Grill the toppings

    During the last few minutes of cooking the sausages, place chopped onions and green peppers on the grill. Grill until they are tender and slightly charred, about 3-4 minutes.

Assembly

    Assemble the hot dogs

    Remove the sausages from the grill and let them rest for a couple of minutes. Place each sausage in a hot dog bun. Top with grilled onions, green peppers, chopped tomatoes, and shredded cheese.

    Add condiments

    Drizzle mustard, ketchup, and hot sauce over the top of the assembled hot dogs. Adjust the amounts to taste.
