Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Preparing Sauce

    Mix the Sauce Ingredients

    In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined. Set aside.

Cooking Pancetta

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until the pancetta is crispy and golden, about 5-7 minutes. Remove from heat and set aside.

Combining Ingredients

    Combine Pasta and Pancetta

    Once the spaghetti is al dente, reserve 1 cup of the pasta cooking water, then drain the spaghetti. Quickly add the hot pasta to the skillet with the pancetta. Toss to combine.

    Add Sauce

    Remove the skillet from heat. Pour the egg and cheese mixture over the hot pasta, tossing quickly to combine and create a creamy sauce. If the sauce is too thick, add some reserved pasta water, a little at a time, until desired consistency is reached.

Serving

    Plate and Garnish

    Serve immediately, garnished with chopped fresh parsley and additional Pecorino Romano cheese if desired.
