    Prepare the Ham Hock

    Rinse the fresh ham hocks under cold water to remove any impurities. Pat them dry with paper towels.

    Chop Vegetables

    Chop the carrots and celery into bite-sized pieces. Quarter the onion and smash the garlic cloves.

Cooking

    Combine Ingredients

    In a large pot, add the rinsed ham hocks, water, carrots, celery, onion, garlic, bay leaves, black peppercorns, and thyme.

    Bring to a Boil

    Place the pot on the stove over high heat. Bring the mixture to a boil.

    Once boiling, reduce the heat to low and let it simmer for approximately 2 to 3 hours. Skim off any foam that rises to the surface.

    After 2 hours, check the ham hocks for tenderness. They should be fork-tender and the meat should easily pull away from the bone.
