Prepare the Roast
Preheat your oven to 325°F (163°C). Take the bone-in shoulder roast out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook more evenly.

Pat the roast dry with paper towels. Rub the olive oil all over the roast. Then, season generously with salt and black pepper on all sides.
