    Prepare the Pork

    Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil and then generously coat it with jerk seasoning.

    Sear the Meat

    In a large oven-safe pot, heat some olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 5 minutes per side.

    Remove the pork from the pot and set aside. In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent.

    Cook the Pork

    Return the pork to the pot, add chicken broth, and bring to a simmer. Cover the pot with a lid and transfer to the oven. Cook for about 4-5 hours, or until the meat is tender and easily pulls apart.

    Remove the pot from the oven and let the pork cool slightly. Use two forks to shred the meat into bite-sized pieces.
