Prepare the Catfish
In a pot of boiling water, cook the catfish fillets for about 10 minutes or until fully cooked. Remove from water, let cool, and then flake the fish into small pieces.

Mix the Ingredients
In a large mixing bowl, combine the flaked catfish, breadcrumbs, chopped green onions, mayonnaise, eggs, Dijon mustard, Old Bay seasoning, salt, and black pepper. Mix until well combined.

Form the Cakes
Shape the mixture into patties, about 1 inch thick. You should get around 6-8 cakes depending on size.

Fry the Cakes
In a large skillet, heat the oil over medium heat. Once hot, add the catfish cakes in batches, cooking for about 4-5 minutes on each side or until golden brown.

Serve
Remove the cakes from the skillet and place them on paper towels to drain excess oil. Serve warm with your choice of dipping sauce.
