Prepare the Marinade
In a bowl, whisk together soy sauce, honey, garlic powder, ground ginger, red pepper flakes, black pepper, and sesame oil until well combined.

Marinate the Pork Shanks
Place the pork shanks in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork and ensure they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Bake the Shanks
Remove the pork shanks from the marinade and place them in a roasting pan. Reserve the marinade. Bake in the preheated oven for about 1.5 hours, or until the meat is tender and the skin is crispy, basting with the reserved marinade every 30 minutes.

Garnish and Serve
Once the shanks are done, remove them from the oven and let them rest for 10 minutes. Slice the green onions and sprinkle them over the shanks before serving.
