Taco Filling

    Prepare the Shrimp

    In a bowl, season the shrimp with olive oil, salt, and black pepper. Toss to coat thoroughly.

    Cook the Shrimp

    Grill or fry the shrimp over medium-high heat for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable.

Pico de Gallo

    Mix the Ingredients

    In a bowl, combine diced tomatoes, red onion, cilantro, lime juice, minced jalapeño, and salt. Mix well and set aside.

Cole Slaw

    Combine Slaw Ingredients

    In a large bowl, mix shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss until well combined. Chill in the refrigerator for at least 30 minutes.

Comeback Dressing

    Make the Dressing

    In a bowl, whisk together mayonnaise, ketchup, Worcestershire sauce, hot sauce, lemon juice, and salt to taste until smooth.

Assembly

    Assemble the Tacos

    On each warm tortilla, layer the cooked shrimp, a generous amount of pico de gallo, cole slaw, and drizzle with comeback dressing.

    Serve the assembled tacos with cooked rice and refried beans on the side.
