Seafood Preparation
Prepare the Seafood
Rinse the catfish fillets, shrimp, and oysters under cold water. Pat them dry with paper towels.
Breading and Frying
Prepare the Breading
In a bowl, mix together cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper.
Bread the Seafood
Dredge each piece of seafood in the breading mixture, ensuring they are fully coated.
Fry the Seafood
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the catfish fillets for about 5-7 minutes until golden brown. Fry the shrimp for 3-4 minutes and oysters for 2-3 minutes. Remove and drain on paper towels.
Po'boy Assembly
Prepare the Po'boy
Slice the French bread loaves in half. Layer with shredded lettuce, sliced tomatoes, fried seafood, pickles, and drizzle with remoulade sauce.
Serve
Serve the po'boys immediately while warm, accompanied by extra remoulade sauce and any remaining fried seafood.
