Spicy Flour Dredge

Prepare the Dredge
In a large bowl, combine the all-purpose flour, cayenne pepper, paprika, garlic powder, salt, and black pepper. Mix well until fully blended.
Spicy Pickled Buttermilk

Make the Buttermilk Mixture
In a separate bowl, whisk together the buttermilk, chopped pickled jalapeños, and hot sauce until smooth. Set aside.
Fried Catfish

Prepare the Catfish
Dip each catfish fillet into the spicy flour dredge, ensuring it is fully coated. Then, immerse it in the spicy pickled buttermilk, allowing any excess to drip off.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the coated catfish fillets in the oil. Fry for about 4-5 minutes per side or until golden brown and crispy. Remove and drain on paper towels.
Zesty Sweet-with-Heat Sauce

Prepare the Sauce
In a small bowl, combine mayonnaise, honey, and sriracha. Mix well until smooth and set aside.
Cole-Slaw

Mix the Cole-Slaw
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until the vegetables are well coated. Cover and refrigerate for at least 30 minutes.
Sandwich Assembly

Assemble the Sandwiches
On each burger bun, place a fried catfish fillet, top with a generous spoonful of the zesty sweet-with-heat sauce, a handful of cole-slaw, and a few pickle slices. Close the sandwich with the top bun and serve immediately.
