Method

Preparation of Lobster

  1. 1

    Cook the Lobster

In a large pot of boiling salted water, cook the lobsters for about 8-10 minutes or until bright red. Remove the lobsters, allow to cool, then remove meat from the shell, chop it roughly, and set aside.

Cooking the Stew

  1. 2

    Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery. Sauté until softened, about 5-7 minutes. Add the garlic and cook for an additional minute.

  2. 3

    Add Flour

Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for 2 minutes, allowing the flour to absorb the flavors.

  3. 4

    Incorporate Liquids

Slowly pour in the fish stock while stirring continuously to avoid lumps. Then add the heavy cream, potatoes, thyme, bay leaf, salt, black pepper, paprika, and cayenne pepper.

  4. 5

    Simmer the Stew

Bring the stew to a gentle simmer and cook for 20-25 minutes, or until the potatoes are tender and the stew has thickened slightly.

Final Touches

  1. 6

    Add Lobster Meat

Once the stew is thickened, add the chopped lobster meat and langostino lobster meat. Stir gently to combine and heat through for another 5 minutes.

  2. 7

    Serve

Ladle the lobster stew into bowls and serve hot with slices of toasted bread on the side.
