Crust Preparation
- 1
Prepare the Graham Cracker Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until well combined.
- 2
Form the Crust
Press the graham cracker mixture firmly into the bottom and up the sides of a 9-inch pie pan. Make sure the crust is even and compact.
- 3
Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.
Filling Preparation
- 4
Mix the Filling
In a large mixing bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until the mixture is smooth and well combined.
- 5
Pour the Filling
Pour the filling mixture into the cooled graham cracker crust, spreading it evenly.
- 6
Bake the Filling
Bake the pie in the oven at 350°F (175°C) for 10-12 minutes. The filling should be set but slightly jiggly in the center. Remove from the oven and allow to cool.
- 7
Chill the Pie
Refrigerate the pie for at least 3 hours, or until fully chilled.
Topping Preparation
- 8
Whip the Cream
In a mixing bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
- 9
Top the Pie
Spread the whipped cream evenly over the top of the chilled pie. Garnish with additional lime zest.
