Method
Preparation of Jalapeno Poppers

Prepare the Jalapenos
Slice each jalapeno in half lengthwise and remove the seeds and membranes to reduce the heat. Set aside.

Make the Filling
In a bowl, combine the shrimp, cream cheese, and cheddar cheese. Mix well until combined. Season with salt and black pepper to taste.

Stuff the Jalapenos
Spoon the shrimp and cheese mixture into each halved jalapeno, filling them generously.

Wrap with Bacon
Take one bacon strip and wrap it around each stuffed jalapeno, securing it in place. You may need to use a toothpick to hold the bacon if it doesn't stay in place.
Breading and Frying

Set Up Breading Station
In a shallow bowl, place the flour. In another bowl, beat the egg. In a third bowl, place the breadcrumbs. This will be your breading station.

Breading the Poppers
Dredge each bacon-wrapped jalapeno first in flour, then dip it in the beaten egg, and finally coat it with breadcrumbs. Ensure they are well coated.

Heat Oil for Frying
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Poppers
Carefully lower the breaded jalapeno poppers into the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.
Making the Sauces

Prepare Papous Sauce
In a small bowl, mix together mayonnaise, ketchup, hot sauce, and lemon juice until smooth. Adjust seasoning to taste.

Make Ranch Dressing
In another bowl, whisk together buttermilk, mayonnaise, dried dill, garlic powder, onion powder, salt, and black pepper until well combined. Refrigerate until ready to serve.
