Method

Preparation of Shrimp and Vegetables

  1. 1

    Skewer the Shrimp and Vegetables

In a bowl, toss the shrimp with olive oil, salt, and black pepper. Cut the zucchini, bell peppers, and onion into bite-sized pieces. Thread the shrimp and vegetables onto skewers, alternating between shrimp and vegetables.

  2. 2

    Prepare the Lemon

Cut the lemon in half. Set one half aside for garnish and squeeze the juice from the other half over the skewered shrimp and vegetables.

Cooking the Ka-Bob

  1. 3

    Grill the Skewers

Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 3-4 minutes on each side or until the shrimp are opaque and the vegetables are tender.

Preparing the Style Options

  1. 4

    Prepare Garlic Butter

In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Brush this mixture over the skewers before serving.

  2. 5

    Prepare Chimichurri

In a bowl, combine chopped parsley, red wine vinegar, and red pepper flakes. Mix well and serve as a dipping sauce on the side.

Preparing Borracho Beans and Rice

  1. 6

    Cook the Rice

In a pot, bring 4 cups of water to a boil. Add 2 cups of white rice, cover, and reduce heat to low. Cook for about 18-20 minutes until the rice is tender and water is absorbed.

  2. 7

    Heat Borracho Beans

In a saucepan, heat the canned borracho beans over medium heat until warmed through. Stir occasionally.

  3. 8

    Garnish with Green Onions

Chop the green onions and sprinkle over the warmed borracho beans before serving.
