Method

Preparation of Red Fish

    Marinate the Fish

    In a bowl, combine olive oil, lemon juice, salt, black pepper, and garlic powder. Add the red fish fillets, ensuring they are well coated. Let them marinate in the refrigerator for at least 30 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Grill the marinated fish fillets for about 4-5 minutes on each side or until they are cooked through and have nice grill marks.

Garlic Butter Sauce

    Prepare Garlic Butter Sauce

    In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in chopped parsley and remove from heat. Drizzle over grilled fish before serving.

Chimichurri Sauce

    Make Chimichurri Sauce

    In a bowl, mix chopped parsley, dried oregano, minced garlic, red wine vinegar, olive oil, and red pepper flakes. Stir until well combined. Let sit for at least 10 minutes to allow flavors to meld.

    Toss sliced zucchini and yellow squash with olive oil, salt, and black pepper. Grill alongside the fish for about 3-4 minutes, turning occasionally until tender and grill marks appear.

White Rice

    In a pot, combine white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed. Fluff with a fork before serving.

Borracho Beans

    In a saucepan, combine cooked pinto beans, beer, chopped onion, minced garlic, cilantro, and salt. Cook over medium heat until heated through and flavors meld, about 10-15 minutes.
