Fish Preparation

    Marinate the Trout

    In a bowl, whisk together olive oil, lemon juice, salt, and black pepper. Add the rainbow trout fillets and coat them well in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat while the trout is marinating.

Garlic Butter Sauce

    Prepare Garlic Butter

    In a small saucepan over medium heat, melt the butter. Add minced garlic and cook until fragrant, about 1-2 minutes. Remove from heat and stir in chopped parsley. Set aside.

Chimichurri Sauce

    Make Chimichurri

    In a food processor, combine fresh parsley, oregano, minced garlic, olive oil, red wine vinegar, and red pepper flakes. Pulse until well combined but still slightly chunky. Set aside.

Vegetable Side

    Grill Zucchini and Squash

    Slice zucchini and yellow squash into 1/4 inch thick rounds. Toss them with olive oil, salt, and black pepper. Grill them on medium heat for about 4-5 minutes on each side until tender and slightly charred.

White Rice

    Cook the Rice

    In a pot, bring water to a boil. Add the white rice and salt. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed. Fluff with a fork before serving.

Borracho Beans

    Cook Borracho Beans

    In a pot, sauté diced onion and minced garlic until translucent. Add pinto beans, beer, cumin, and salt. Bring to a simmer and cook for 30-40 minutes until beans are heated through and flavors meld.

Grilling the Trout

    Grill the Trout

    Remove the trout from the marinade and place on the preheated grill. Grill for about 4-5 minutes on each side or until the fish flakes easily with a fork. Serve immediately, topped with garlic butter or chimichurri sauce.
