Grilled Mahi

    Marinate the Mahi Mahi

    In a bowl, combine olive oil, lemon juice, salt, black pepper, paprika, and garlic powder. Add the Mahi Mahi fillets to the bowl and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

    Grill the Mahi Mahi

    Preheat the grill to medium-high heat. Remove the fillets from the marinade and place them on the grill. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Garnish with fresh parsley before serving.

Grilled Zucchini and Squash

    Prepare the Vegetables

    Slice the zucchini and yellow squash into 1/4-inch thick slices. In a bowl, drizzle them with olive oil, and season with salt and black pepper. Toss to coat evenly.

    Grill the Vegetables

    Place the seasoned zucchini and squash on the grill alongside the Mahi Mahi. Grill for about 3-4 minutes on each side until tender and slightly charred.

White Rice

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt, stir, then reduce the heat to low. Cover and let simmer for about 18-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork before serving.

Borracho Beans

    Prepare the Beans

    In a pot over medium heat, add diced onion and sauté until translucent. Add minced garlic and cook for an additional minute. Stir in the canned black beans and beer (if using). Bring to a simmer and let cook for about 10 minutes, stirring occasionally.

    Finish the Beans

    Stir in chopped cilantro and season with salt. Cook for another 5 minutes to allow flavors to combine.
