Prepare the Shrimp

    Marinate the Shrimp

    In a large bowl, combine olive oil, minced garlic, paprika, cayenne pepper, salt, and black pepper. Add the shrimp and toss to coat. Let it marinate for 20 minutes.

    Grill the Shrimp

    Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers. Grill for 2-3 minutes on each side until shrimp are pink and opaque. Brush with BBQ sauce during the last minute of grilling.

Prepare the Slaw

    Mix the Slaw Ingredients

    In a large mixing bowl, combine shredded cabbage, grated carrot, and chopped green onions.

    Make the Dressing

    In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

    Combine Slaw

    Pour the dressing over the cabbage mixture and toss until everything is evenly coated. Refrigerate for at least 30 minutes before serving.

    In a saucepan, bring 2 cups of water to a boil. Add the uncooked rice and salt, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender and water is absorbed.
