Preparation of Gator Nuggets

Prepare the Alligator Meat
Rinse the diced alligator meat under cold water and pat dry with paper towels.

Set Up Breading Station
In three separate bowls, place flour in the first bowl, beaten eggs mixed with milk in the second, and breadcrumbs mixed with salt, black pepper, and cayenne pepper in the third bowl.

Bread the Gator Nuggets
Coat each piece of alligator meat first in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture. Ensure they are evenly covered.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Nuggets
Carefully place the breaded alligator nuggets in the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown. Remove and drain on paper towels.
Preparation of Papous Sauce

Mix the Sauce Ingredients
In a bowl, combine mayonnaise, ketchup, horseradish sauce, lemon juice, garlic powder, salt, and black pepper. Stir until well blended.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
