Shrimp and Breading

Poor Boy Assembly

Sides

Method

Prepare the Shrimp

  1. 1

    Clean the Shrimp

Peel and devein the jumbo shrimp, leaving the tails intact. Rinse under cold water and pat dry with paper towels.

  2. 2

    Set Up Breading Station

In three separate shallow bowls, place the flour in the first, whisk the eggs in the second, and the panko breadcrumbs mixed with salt, black pepper, and cayenne pepper in the third.

  3. 3

    Bread the Shrimp

Dredge each shrimp in flour, shaking off excess. Dip in the whisked eggs, then coat thoroughly with the panko breadcrumb mixture. Set aside on a plate.

Fry the Shrimp

  1. 4

    Heat Oil

In a large, deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Shrimp

Carefully add the breaded shrimp to the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Assemble the Poor Boys

  1. 6

    Toast the Baguettes

Slice the baguettes in half lengthwise and toast them lightly in the oven or on a skillet until golden.

  2. 7

    Layer the Ingredients

Spread tartar sauce on one side of the baguette and cocktail sauce on the other. Add the fried shrimp, followed by lettuce, tomato slices, and onion rings. Close the sandwich.

Prepare the Sides

  1. 8

    Cook Fries

Cook the frozen fries according to package instructions until crispy.

  2. 9

    Heat Hushpuppies

Prepare hushpuppies as per package instructions, or fry them fresh until golden brown.
