Preparing the Oysters

    Clean the Oysters

    Rinse the Gulf oysters under cold water to remove any sand or debris. Pat them dry with a paper towel.

    Prepare the Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the cornmeal, salt, black pepper, and cayenne pepper.

    Bread the Oysters

    Dredge each oyster in the flour, then dip it into the egg mixture, and finally coat it with the cornmeal mixture. Ensure each oyster is well-coated.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Oysters

    Carefully place the breaded oysters in the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown. Remove and drain on paper towels.

Assembling the Sandwich
