Wash the russet potatoes thoroughly under cold running water to remove dirt. Cut each potato into thin strips, approximately 1/4 inch thick, to create fries.

Soak the Potatoes
Place the cut potato strips in a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps make the fries crispier.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature using a kitchen thermometer.

Dry the Potatoes
After soaking, drain the water and pat the potato strips dry using paper towels. This step is crucial to avoid oil splatter during frying.

Fry the Potatoes
Carefully add a handful of the dried potato strips into the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove the fries and place them on a plate lined with paper towels to absorb excess oil.
