Preparing the Calamari

Clean and Slice Calamari
If using whole calamari, clean them thoroughly and slice them into rings about 1/2 inch thick. If using pre-sliced calamari, proceed to the next step.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Dredge the Calamari
Dip the calamari rings first into the egg mixture and then dredge in the flour mixture, ensuring they are fully coated.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
Making the Papous Sauce

Combine Ingredients
In a small bowl, mix together mayonnaise, ketchup, lemon juice, hot sauce, and garlic powder until smooth.

Adjust to Taste
Taste the sauce and adjust seasoning if needed. Set aside.
Making the Ranch Dressing

Mix Ingredients
In another small bowl, combine mayonnaise, sour cream, dried dill, garlic powder, onion powder, salt, black pepper, and milk.

Blend Until Smooth
Mix well until all ingredients are smooth and well incorporated. Adjust seasoning if necessary.
