Pizza Dough

Method

Prepare the Dough

    Activate Yeast

    In a small bowl, combine warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Toppings

    Clean Clams

    Thoroughly rinse the fresh clams under cold water to remove any grit or sand.

    Chop Vegetables

    Finely chop the Calabrese peppers and mince the garlic cloves.

    Sauté Toppings

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the chopped Calabrese peppers and sauté for another 2-3 minutes.

Assemble and Bake

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Shape Dough

    Once the dough has risen, punch it down and place it on a floured surface. Roll or stretch it into a round shape to fit your pizza stone or baking sheet.

    Add Toppings

    Spread the sautéed garlic and Calabrese peppers evenly over the dough. Distribute the cleaned clams over the top and sprinkle with grated Parmigiano Reggiano cheese. Season with salt and pepper to taste.

    Transfer the pizza to the preheated oven and bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbly.

    Once baked, remove the pizza from the oven, sprinkle with chopped fresh parsley, slice, and serve hot.
