Choose between fried or grilled - Catfish filet atop mixed greens, carrots, roma tomatoes, cucumbers, avocado, craisins and sliced almonds. Served with 2 hushpuppies, lemon, and your choice of dressing.

Method

Prepare the Catfish

    Fried Catfish

    If you choose fried catfish, heat oil in a frying pan over medium-high heat. Season the catfish fillets with salt and pepper, then dredge in cornmeal.

    Once the oil is hot, carefully place the catfish fillets in the pan and fry for about 3-4 minutes on each side until golden and cooked through. Remove and let drain on paper towels.

    Grilled Catfish

    If you choose grilled catfish, preheat your grill to medium-high. Season the catfish fillets with salt, pepper, and a drizzle of olive oil.

    Grill the fillets for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from grill and let rest.

Prepare the Hush Puppies

    In a mixing bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well.

    In another bowl, whisk together milk and beaten egg. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

    Heat oil in a deep pot or fryer to 365°F (185°C). Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Assemble the Salad

    In a large salad bowl, place the mixed greens as the base.

    Top with shredded carrots, diced roma tomatoes, sliced cucumbers, diced avocado, craisins, and sliced almonds.

    Place the cooked catfish filet on top of the salad.

    Serve with two hush puppies on the side and lemon wedges.

    Drizzle your choice of dressing over the salad just before serving.
