Catfish Preparation

    Marinate the Catfish

    In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

    Prepare the Breading

    In a shallow dish, mix together cornmeal, flour, cajun seasoning, salt, and black pepper.

    Bread the Catfish

    Remove the catfish fillets from the buttermilk and dredge each fillet in the cornmeal mixture, ensuring they are well coated.

    Heat the Oil

    In a large skillet, heat the oil over medium-high heat until hot (about 350°F or 175°C).

    Fry the Catfish

    Carefully place the breaded catfish fillets in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Cut the baguettes in half lengthwise and toast them lightly, if desired.

    Spread tartar sauce on one half of the baguette and cocktail sauce on the other half. Layer the fried catfish fillet, lettuce, sliced tomato, and onion on the baguette.
