    Prepare the Catfish Fillet

    Rinse the catfish fillet under cold water and pat it dry with paper towels. Set aside.

    Make the Breading Mixture

    In a shallow dish, combine the cornmeal, all-purpose flour, salt, black pepper, paprika, and garlic powder. Mix well until all dry ingredients are evenly distributed.

    Prepare the Wet Mix

    In another bowl, whisk together the egg and milk until the mixture is smooth and well combined.

Cooking

    Heat the Oil

    In a heavy skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading mixture into it; if it sizzles, the oil is ready.

    Coat the Fillet

    Dip the catfish fillet into the wet mix, making sure it is fully coated. Then, transfer the fillet to the breading mixture, pressing it down firmly to ensure an even coating on both sides.

    Fry the Fillet

    Carefully place the coated catfish fillet into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. The internal temperature should reach at least 145°F (63°C).

    Drain and Serve

    Once cooked, remove the fillet from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce or sides.
