Prepare the Pudding

    Mix Dry Ingredients

    In a medium saucepan, combine 3 tablespoons of sugar, 1 tablespoon of cornstarch, and 1 teaspoon of salt. Whisk together until well blended.

    Add Milk

    Gradually add 2 cups of milk to the dry ingredients, whisking continuously to prevent lumps from forming.

    Cook the Mixture

    Place the saucepan over medium heat and cook the mixture, stirring constantly until it thickens and begins to bubble. This should take about 5-7 minutes.

    Prepare Egg Yolks

    In a separate bowl, whisk together 3 large egg yolks. Once the pudding mixture is bubbling, remove it from the heat.

    Temper the Egg Yolks

    Slowly pour about 1 cup of the hot pudding mixture into the bowl with the egg yolks, whisking constantly to temper the eggs.

    Combine and Cook Again

    Return the tempered egg yolk mixture to the saucepan with the remaining pudding mixture. Cook over low heat for an additional 2-3 minutes, stirring constantly, until it thickens. Remove from heat and stir in 1 teaspoon of vanilla extract.

Assemble the Banana Pudding

    Slice the Bananas

    Peel and slice the 3 medium ripe bananas into thin rounds.

    Layer the Ingredients

    In a large serving dish, layer vanilla wafers at the bottom, followed by a layer of banana slices, and then pour a layer of the pudding mixture over the bananas. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.

    Add Whipped Cream

    Spread 2 cups of whipped cream over the top layer of pudding. You can use a spatula or the back of a spoon to make it smooth.

    Chill and Serve

    Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for the best flavor. Serve chilled.
