Preparation of Queso

Cook the Sausage
In a skillet over medium heat, crumble and cook the pork sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat and set aside.

Prepare the Alligator
In the same skillet, add the diced alligator meat and cook for about 5-7 minutes until fully cooked and lightly browned. Set aside.

Melt the Cream Cheese
In a large saucepan, over low heat, add the cream cheese, shredded cheddar cheese, and Monterey Jack cheese. Stir until melted and smooth.

Combine Ingredients
Once the cheeses are melted, stir in the cooked sausage and alligator meat. Add garlic powder, cumin, chili powder, salt, and black pepper. Mix well until everything is evenly combined and heated through.

Remove the queso from heat and transfer to a serving bowl. Top with pico de gallo and chopped cilantro.
