Method

Preparing the Seafood

  1. 1

    Prepare the Shrimp

Rinse the shrimp under cold water. Pat them dry with a paper towel and season with salt and pepper to taste.

  2. 2

    Prepare the Oysters

If using raw oysters, ensure they are cleaned and shucked properly. Set aside in a bowl.

Making the Fries

  1. 3

    Cut the Potatoes

Wash and peel the potatoes. Cut them into even strips to make fries.

  2. 4

    Fry the Potatoes

Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Making Hushpuppies

  1. 5

    Mix Dry Ingredients

In a bowl, combine cornmeal, all-purpose flour, baking powder, sugar, and salt.

  2. 6

    Add Wet Ingredients

Stir in the buttermilk until just combined. The batter should be thick but not dry.

  3. 7

    Fry the Hushpuppies

Heat oil to 350°F (175°C) in a deep fryer or heavy pot. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Serving

  1. 8

    Plate the Seafood

On a serving plate, arrange the fried shrimp and oysters. Serve with fries and hushpuppies on the side.

  2. 9

    Add Sauces

Serve with cocktail sauce and tartar sauce for dipping.
