Prepare Sushi Rice

Rinse the Rice
In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, reduce heat, cover, and simmer for 18 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold into the warm rice. Let cool to room temperature.

Dice the Tuna
Cut the yellowfin tuna into small cubes (about 1/2 inch).

Mix Spicy Tuna Sauce
In a bowl, combine diced tuna, sriracha, mayonnaise, soy sauce, and sesame oil. Mix gently until the tuna is well coated.
