BBQ Sauce Preparation

Make the BBQ Sauce

In a medium saucepan, combine the kombucha, ketchup, apple cider vinegar, brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Stir well to combine.

Simmer the Sauce

Bring the mixture to a simmer over medium heat. Reduce heat to low and let it cook for about 15 minutes, stirring occasionally until thickened. Remove from heat and set aside.

Cook the Chicken

Preheat your grill or oven to medium-high heat. Season the chicken thighs with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Add BBQ Sauce

During the last few minutes of cooking, brush the BBQ sauce generously over the chicken thighs. Allow it to caramelize slightly.

Coleslaw Preparation

Make the Coleslaw

In a large bowl, combine the shredded cabbage and carrots. In a separate bowl, mix the mayonnaise, apple cider vinegar, sugar, salt, and black pepper to create the dressing.

Combine and Chill

Pour the dressing over the cabbage and carrots, mixing well to combine. Cover and refrigerate for at least 30 minutes before serving.

Assembly

Assemble the Dish

Once the chicken is cooked, slice it into strips. Serve on a plate topped with a generous portion of coleslaw, a handful of shredded pepperjack cheese, and a side of bread and butter pickles.
