Cook the Chicken

In a pot, bring water to a boil and add chicken breasts. Cook for about 15-20 minutes until fully cooked. Remove and shred the chicken.

Sauté Vegetables

In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

Combine Ingredients

Add the shredded chicken to the skillet along with cumin, chili powder, salt, and black pepper. Mix thoroughly and cook for an additional 3-5 minutes. Stir in chopped cilantro.

Prepare Tortillas

Preheat the oven to 350°F (175°C). Heat corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.

Assemble Enchiladas

Spread a little enchilada sauce on the bottom of a baking dish. Take a tortilla, place a scoop of the chicken filling in the center, sprinkle with cheese, and roll it up. Place seam side down in the baking dish.

Add Sauce and Cheese

Once all tortillas are filled and placed in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with remaining shredded cheddar cheese.

Bake

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serve

Allow to cool slightly before serving. Serve warm with a dollop of sour cream on top.
