Salad Preparation

    Prepare the Salad Base

    In a large bowl, combine the romaine lettuce, arugula, and red cabbage. Chop the cucumber and tomato into bite-sized pieces and add them to the bowl.

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut the avocado into cubes and set aside. If using store-bought pickled onions, drain excess liquid before adding to the salad.

    Add the prepared avocado, pickled onion, crunchy corn, and smoked almonds to the bowl with the salad base. Toss gently to combine.
