    Prepare the Marinade

    In a small bowl, whisk together the olive oil, minced garlic, lemon juice, chopped dill, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

    Cook the Salmon

    Preheat the grill or oven to medium-high heat. Remove the salmon from the marinade and place it on the grill or a baking tray. Cook for about 5-6 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Cook the Quinoa

    In a saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed all the water.

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the halved cherry tomatoes and sauté for about 2 minutes. Then add the fresh spinach, salt, and black pepper, cooking until the spinach wilts.

    Once the quinoa is cooked, fluff it with a fork and mix it with the sautéed tomatoes and spinach. Serve alongside the grilled salmon and garnish with lemon zest.
