Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.

Cook the Ground Beef
Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 7-10 minutes.

Add Vegetables
Stir in the diced bell pepper and cook for an additional 3-4 minutes until softened.

Combine the Remaining Ingredients
Pour in the canned diced tomatoes, tomato sauce, chili powder, ground cumin, salt, and black pepper. Stir well to combine all ingredients.

Simmer the Mixture
Reduce the heat to low and let the mixture simmer for 15 minutes, allowing the flavors to meld together.

Serve
Serve the beef mixture over tortilla chips and top with shredded cheddar cheese. Enjoy while hot!
