Braised Beef Preparation

    Sear the Beef

    In a large pot, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove from pot and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté for about 3-4 minutes until softened and fragrant. Stir in the aji amarillo paste and cook for an additional minute.

    Braise the Beef

    Return the seared beef to the pot. Add beef broth and bay leaves. Bring to a boil, then reduce to a simmer. Cover the pot and let it braise for about 3 hours, or until the beef is tender and easily shredded.

Rice and Beans Preparation

    Cook the Rice

    In a separate pot, bring 4 cups of water to a boil. Add jasmine rice and a pinch of salt. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed.

    Prepare Black Beans

    In a small saucepan, combine canned black beans, cumin, and lime juice. Heat over medium heat until warmed through, about 5-7 minutes. Stir in chopped cilantro before serving.

Assembly

    Serve the Dish

    Shred the braised beef and serve over jasmine rice with a generous portion of black bean sofrito on the side. Top with pickled red onions and a drizzle of salsa verde. Garnish with additional cilantro if desired.
