Rinse the heirloom beans under cold water and remove any debris. Place them in a large bowl, cover with water, and soak overnight.

Dice the organic tomatoes, jalapeño pepper (remove seeds for less heat if desired), onion, and mince the garlic cloves.

Cook the Beans
Drain the soaked beans and transfer them to a pot. Add 4 cups of fresh water. Bring to a boil, then reduce heat and simmer for 1-1.5 hours until beans are tender.

Combine Ingredients
Once the beans are cooked, drain any excess water and combine them with the sautéed vegetables in the skillet. Add the diced organic tomatoes, salt, and black pepper. Stir well to combine.

Cook the mixture for an additional 5-10 minutes, allowing the flavors to meld together. Stir in the lime juice and chopped cilantro before serving.
