Method

Cooking the Rice

    Rinse the rice

    In a fine mesh strainer, rinse the forbidden black rice and red japonica rice under cold running water until the water runs clear, about 2-3 minutes.

    Cook the rice

    In a medium pot, combine the rinsed rice with 4 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

Preparing the Vegetables

    Prepare the snap peas

    Trim the ends of the snap peas and set aside.

    Chop the bok choy

    Wash and chop the bok choy into bite-sized pieces, separating the stems from the leaves.

    Prepare the broccoli

    Wash and cut the broccoli into small florets.

Stir-Frying

    Heat the oil

    In a large skillet or wok, heat the sesame oil over medium-high heat.

    Sauté garlic

    Add minced garlic to the skillet and sauté for 30 seconds until fragrant.

    Add vegetables

    Add the chopped bok choy stems, broccoli florets, and snap peas to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

    Add bok choy leaves

    Add the bok choy leaves and continue to stir-fry for an additional 1-2 minutes until the leaves are wilted.

Combining and Serving

    Combine rice and vegetables

    Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Pour the soy sauce over the mixture and toss everything together until well combined. Season with salt and black pepper to taste.

    Serve

    Serve the forbidden rice hot, garnished with additional sesame seeds or green onions if desired.
